What do you think of this scene? your comfortable sofa, the fireplace lit, your favorite blanket, your dog snuggled up next to you, a good book and this delicious coffee with pumpkin creamer? nothing more to say!
1 tsp Pumpkin Spice Mix (you can make your homemade version with the recipe in my cookbook)
2 scoop Collagen powder (use vegan collagen for the vegan version)
Directions
Place the pumpkin puree and maple syrup in a saucepan and cook over medium heat, stirring constantly (about 6 minutes) until it thickens a bit (so our creamer won’t be so liquid).
In another small pot place the almond milk, cinnamon, pumpkin spice and collagen and stir until dissolved.
Add the pumpkin mixture and heat your creamer while stirring constantly (don’t let it boil).
Serve immediately over just brewed coffee or store it in a glass jar in the fridge for up to 4 days.
