High-Protein Pancakes with Tarwi and Bone Broth

The best protein will always come from animal sources, especially when the animals have been raised properly: pasture-raised and organic eggs, chickens that are fed and cared for naturally, and beef from cows that have eaten grass and lived as nature intended.

Then we have plant-based proteins, like tarwi (also known as chocho), sacha inchi, quinoa, amaranth (kiwicha), cañihua, lentils, black beans, and chickpeas.

It originated in the Andes, with evidence of its cultivation dating back to pre-Incan cultures such as Nazca and Tiahuanaco. This superfood contains over 50% protein, 24% carbohydrates, 13% dietary fiber, and around 22% healthy fats, including omegas 9, 6, and 3. It also offers about 7.5% of important minerals such as iron, calcium, magnesium, potassium, and zinc, as well as vitamin B12. Tarwi stands out not only for its high protein content but also for its remarkable calcium levels.

Beyond its nutritional profile, tarwi has antioxidant and anti-inflammatory properties that can help strengthen the immune system and reduce oxidative stress.

Ingredients

5 eggs

70 g almond flour

30 g tarwi (chocho) protein

30 g coconut flour

30 g bone broth powder (I love the Paleovalley brand)

25 g coconut cream powder

80 g banana

1 tsp pure vanilla extract

1 tsp apple cider vinegar

Pinch of sea salt

1 tsp homemade baking powder (find the recipe in my cookbook)

1/2 tsp baking soda

80 g water

Directions

Place all ingredients in a blender and blend until smooth.

Optional: add wild blueberries, 70% dark chocolate chips, or even raspberries to the batter.

Heat a skillet over medium-high heat and add a small amount of coconut oil.

Pour in some of the batter and cook your pancakes on both sides.

Double the recipe and freeze your pancakes for those busy mornings when you don't have time to makebreakfast.
